Souffle
omelette with Bramleys
Prep: 10 mins Cook: 10-15mins Serves
2Ingredients
450g/1lb Bramley apples, peeled, cored and chopped,
50g/2oz caster sugar
4 eggs, separated
5ml/2tsp caster sugar
4 squirts low cal fat spray
a little icing sugar and cinnamon to dust.
Method
Place the apples in a medium
pan with the caster sugar, cover and simmer for 10 mins or until the apples are
thick and pulpy. Set aside to cool slightly. Mix the egg yolks, remaining caster
sugar together in a bowl. Whisk the egg whites in a separate clean bowl until
they form stiff peaks. Heat a small non-stick frying pan and coat with 2 squirts
of low fat spray. Fold the egg whites into the egg yolk mixture then quickly pour
half into the hot pan. Cook over a moderate heat for 2 mins or until the underside
is pale golden.
Place the pan under a hot grill and cook for a few more minutes until the top
is golden brown. Spoon half the apple puree over one half of the omelette and
fold over. Slip onto a serving plate and dust with icing sugar and cinnamon. Repeat
to make a second omelette in the same way.
